[Ginger Molasses Cookies. AKA - Spice Cookies.]



This recipe comes from a book that I bought up in Whistler on our honeymoon.  I had wanted to buy something that would last through the years - and although i haven't made all the recipes, many of them are in my repertoire ... 


These are the most perfect cookie.  Crunchy and sweet on the outside, chewy on the inside ... a family fave for sure.  (not my image, but they look ExACTly like this).

SPICE COOKIES

375 for 12-15 minutes
makes a few dozen, depending on cookie size.
 

3/4 cup margarine
1 cup white sugar
1/4 cup molasses
1 egg

2 cups of flour
1/4 tsp salt
2tsp baking soda
1 tsp cinnamon
1 tsp cloves
1 tsp ginger
**you'll also need a small dish of granulated sugar to roll the cookies in

Directions:


- cream sugar and margarine; add egg and molasses and cream well.
- sift dry ingredients together and add to the creamed mixture.
- roll into small balls
- dip the cookie balls into the bowl of sugar
- place on a cookie sheet and flatten with a fork
