[DOLE WHIP]

This is SO good.



Simple Pineapple Dole Whip Soft Serve (Ninja Swirl)



Servings 4 servings
Calories 300kcal

Ingredients

  • 1 cup fresh (or frozen) pineapple
  • 1 splash unsweetened vanilla almond milk or coconut milk
  • pineapple juice to the fill line

Instructions

  • Add the pineapple and almond milk to the Ninja Swirl pint container and fill it to the max fill line with pineapple juice. Freeze the container in the freezer overnight.
  • Insert the canister onto the Ninja Swirl, select Soft Serve and then select Fruit Whip. Let the machine churn and then dispense the ice cream into your favorite sugar cookie or cake cone. Enjoy like you're a kid at Disney!

[ Mint Chocolate Chip Ice Cream ]

This was AMAZING.
14-oz can sweetened condensed milk
2 cups heavy cream
1 cup milk (I use 1%)
large pinch salt
2 teaspoons vanilla extract
1/2 teaspoon pure mint extract
5 drops green food coloring (optional)
4 ounces bittersweet chocolate
Combine all ingredients except for the chocolate in a large bowl and whisk until well combined. Pour into your ice cream maker and process according to the manufacturer’s instructions.

[ Strawberry Coconut Honey Ice Cream with Dark Chocolate Chunks ]


Coconut-cream ice cream has been my favourite thing, until I got sick of the taste of coconut ice-cream LOL.  Tonight I tried my hand at berry flavoured ice cream, with some chocolate ... it sure didn't last long.

My new favourite.  By FAR.

Strawberry Coconut Honey Ice Cream with Dark Chocolate Chunks

1/2 cup fresh strawberries
3/4 cup frozen mixed berries (it's what I had in the house.  I added this because I didn't have enough fresh berries)
1 tin coconut cream
1 tin coconut milk (light)
1/4 cup honey
1/8 cup Trader Joes dark chocolate chunks

Directions:

1. Place all ingredients in the blender EXCEPT chocolate chunks, unless you puree them well.  The chunks can clog the ice cream maker ... 

2.  Pour into prepared ice cream maker.  Turn ON *smile*.

3.  WAIT.

4.  Add chocolate chunks, near end.

5.  DEVOUR.   And then try and put any leftovers into an air-tight container to finish in the morning for breakfast.

[Caramel Popcorn]


Caramel Popcorn

5 cups fresh air popped popcorn 
1/2 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla

Directions:

1. Melt the butter over medium heat.  Add the brown sugar, corn syrup and salt.  Stir constantly until it begins to boil - then let it boil UNTOUCHED for 4 minutes.
2. Add the baking soda and vanilla; stir.
3. Pour over the prepared popcorn in a large baking pan (or two).
4. bake in 200F oven for 1 hour, stirring every 20minutes or so ... if you like it CHEWY, then bake less.

1 tin of coconut milk
3 cups of almond milk
1/4 cup cane sugar
1 tbsp vanilla

Directions:

Place all ingredients in a blender ... blend.  Then pour into the ice cream maker and follow ice cream maker instructions.

[Eggless Chocolate Chip Cookie Dough for Ice Cream]



Eggless Chocolate Chip Cookie Dough for Ice Cream


5tbsp brown sugar 
6tbsp sugar
4tbsp butter, softened
1tsp vanilla
3tbsp whole milk
1 cup flour 
1/2tsp salt
1/2 cup mini chocolate chips

This is enough to make 24 small melon ball size of chunks that can be put in the freezer. When ready to add to icecream, you can cut each ball into quarters.
